Flax Seed Energy Bites

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup ground flax seeds
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup chocolate chips or dried fruit
  • 1 teaspoon vanilla extract

Instructions:

In a large mixing bowl, combine the rolled oats and ground flax seeds.

Add the peanut butter, honey or maple syrup, chocolate chips or dried fruit, and vanilla extract to the bowl.

Stir the mixture until all the ingredients are well combined and the mixture starts to stick together.

If the mixture seems too dry, you can add a little more peanut butter or honey to help it bind together.

Once the mixture is evenly combined, use a spoon or your hands to scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter.

Place the energy bites on a baking sheet lined with parchment paper.

Once all the mixture has been rolled into balls, place the baking sheet in the refrigerator for at least 30 minutes to allow the energy bites to firm up.
