How to Make Lemon Cloud Cookies

These cookies are soft and cake-like.  

They taste bright and citrusy thanks to fresh lemon zest and juice (and lemon extract, if you have it). 

Lemon Cut the fresh lemon into small pieces with a rasp grater, and then squeeze out the juice.
