This recipe is for strawberry-rhubarb spritzes.

The Strawberry-Rhubarb Simple Syrup is so wonderful,  

it makes a great mocktail with Champagne or sparkling water.  

In a saucepan, combine strawberries, rhubarb, sugar, 1 cup water, ginger, and lemon zest.  

Stir occasionally as you boil on medium-high.

Simmer on medium-low heat for 20 minutes, stirring occasionally, until fruit is very soft.  

From heat, drain strawberry mixture into a medium basin through a fine mesh strainer.   

Discard sediments. Mix lemon juice with strained syrup.
