Why Never Roast Carrots with Olive Oil 

We have recently published an article in which we discuss the fact that roast potatoes should not be cooked in extra-virgin olive oil.  

According to a TikTok that was recently uploaded by the cooking school Milk Street Kitchen,  

it was discovered that butter is a more tasty alternative than oil alone when it comes to roasting carrots. 

However, there are some qualifiers to this statement.

Before applying the butter to the root vegetables, according to Gill, the butter is first combined with olive oil.  

The smoke point of refined olive oil is greater than that of butter (although extra-virgin olive oil does not have this property), 

which indicates that the combination is able to survive the heat a little bit better than butter could on its own.
